Blueberry Buttermilk Muffins Recipe - Food.com
This is my adopted recipe Feb 2005 I didnt change the recipe ingredients because 11 members found it good the way it was. I did add 1 teaspoon vanilla as suggested by 1 reviewer. I used 1/2 cup canola oil instead of butter. 2 heaping cups frozen blueberries mixed with a little of the flour mixture to make sure they didnt stick together. I made 6 giant muffins. Very good muffins. I had to bake mine for 35 minutes, they were so big.
Date and Orange Muffins | Now You're Cooking!
As a caterer, I can assure you these muffins are my all-time favorite! The orange and dates are easily chopped in a food processor, but I don't recommend using a blender. You can also chop them quite finely (1/4 inch pieces) by hand. I love the flavour if orange, so I use orange juice instead of milk. If your oven is quite hot, bake at 375F for 20 minutes. (I normally use cupcake liners, but it's not required.)
