this is a great lunch or side dish to close out the summer 👏🏻 

it pairs great with grilled chicken or steak and can be enjoyed cold making it a great healthy desk lunch option! full recipe is below 👇🏻 

ingredients:
1 cup quinoa (measured uncooked)
1 orange bell pepper, diced 
1/2 small red onion, diced
1/3 cup corn, grilled or canned 
1/4 cup fresh mint, finely chopped
1/4 cup fresh basil, finely chopped 
3 tbsp sunflower seeds
1/4 cup feta cheese
1/4 cup olive oil
Juice of 1 small lime 
2 tbsp rice vinegar 
1 tbsp honey 
1 garlic cloves, minced 
1 tsp cumin
Salt, to taste 
Pepper, to taste 

Instructions:
1. Prepare one cup of quinoa according to package instructions.
