Lets go: Ingredients: Serves 4 (419 calories and 22.3g protein per serving) * 4 salmon fillets * 1 can 400ml coconut milk * 2 tablespoons soy sauce * 1 tablespoons fish sauce * 1 tablespoon brown sugar * 2 tablespoon Thai green curry paste * 1 tablespoons sesame oil * 3 cloves garlic, minced * 1 red chilli * 1 tablespoon fresh ginger, grated * 1 bunch baby bok choy, halved * 1 red bell pepper, sliced * 1 medium onion sliced * 1 tsp cumin Garnish: (optional) * Lime wedges * 1-2 tbsp spring onions * Fresh coriander for garnish * 1 tsp sesame seeds for garnish Method: - Add 1 tsp olive oil to a low-medium heat pan and sear off the salmon fillets for 2-5 minutes until nicely seared and cooked through. Remove from the pan and set aside. - In the same pan add, onions, garlic, chilli, peppers and spring onions with a drop of water. Cook for 5-7 minutes until softened then add 1 tbsp thai green curry paste and cook for a further 2-3 minutes. - Add the coconut milk to the pan, soy sauce, fish sauce, brown sugar, sesame oil and 1 tbsp thai green curry. - Season well add bok choy to the pan and cook through for 5 minutes, add the salmon back to the pan and garnish with lime juice, spring onions, chopped corriander and 1 tsp sesame seeds.
