This simple dish tastes best when made with fresh sweet peas and ripe tomatoes, but frozen peas and canned tomatoes can be substituted in a pinch. For a vegetarian version, omit the chourico sausage and add another tsp of smoked paprika.

Ingredients

Meat
• 1 Chourico sausage, sliced (about 1 1/2 cups)
Produce
• 1 Bay leaf
• 2 cloves Garlic
• 1 Onion, medium
• 1 Parsley, fresh
• 2 cups Peas, fresh (or frozen)
• 2 Plum tomatoes, large
Refrigerated
• 4 Eggs
Baking & Spices
• 1 Chile pepper, red hot
• 1 tsp Paprika, smoked hot or sweet
• 1 Salt and pepper
Oils & Vinegars
• 1 tbsp Olive oil
Beer, Wine & Liquor
• 3 tbsp Sherry or red wine, dry
