This moist fruit cake doesn't need to be fed so it's the perfect last-minute Christmas cake. The cake itself is very easy to make – the tricky part is the icing, but you can obviously decorate it however you please. For this recipe you will need a deep 25cm/10in round cake tin, an electric hand whisk or freestanding mixer, a cake smoother and a piping bag fitted with a plain nozzle.

Produce
• 100 g Cherries, dried
• 550 1/4 lb Dried fruit, mixed
• 100 g Figs, dried
• 1 435g tin Pineapple in, juice

• 6 Eggs, free-range

• 3 tbsp Agave syrup mixed with
• 85 g Almond butter
• 1 Food colouring pastes, yellow or orange
• 240 ml Treacle
Baking & Spices
• 1 tsp Almond extract
• 1 1/2 tsp Bicarbonate of soda
• 200 g Brown sugar, soft dark
• 50 g Cocoa powder
• 400 g Golden icing sugar
• 500 g Icing sugar
• 1 Navy blue gel food colouring
• 350 g Plain flour
• 200 g Ready-to-roll black fondant icing
• 125 g Royal icing sugar
• 3 tsp Spice, mixed
• 1 pinch Table salt
• 25 g Vegetable shortening
Oils & Vinegars
• 240 ml Almond oil
Dairy
• 200 g Butter, unsalted
• 1 splash Milk
Desserts
• 65 g Candy melts, blue or purple
• 250 g Marshmallows, mini white
Beer, Wine & Liquor
• 100 ml Sherry, sweet

• 160 ml Water
