My boys will not eat rice unless they request it. But these same boys will go by my sister and they would eat rice. You would swear that it was their favorite thing to eat. But today I am making them a rice dish that they totally enjoyed and they did not request. So I started by putting up my rice to boil. I washed it before I put it to boil. And I placed in just enough water in there. Not too much just to cover the rice. I placed in salt. Complete season and two leaves of bay leaf. Then I covered the pot and lowered the heat. While that was cooking I prepared my carrots, onions, sweet peppers, garlic and flavoring pepper. Now what I'm making is called dirty rice but I'm making my own version of it so I'm placing my own twist. So here I have this is a whole carrot and I'm cubing it up and we're going to set that aside. Once we are finished with our carrots we are going to move on. We're going to move to our onions and I'm using two heads or two bulbs of onions and I want it a bit chunky. I think it's a bit chunky. Not too too big but with some chunk and we need a lot of onions in there because this rice is packed with flavor. Now, I'm going to cut up my sweet pepper. I used the whole sweet pepper and we're also going to make some chunks with that. Next, we're going to cut up our flavoring pepper or pimiento peppers. Now, if you don't like the seeds in your pimiento peppers, feel free to remove I didn't remove mines. And I cut it rough cut it. And then we're going to cut up our garlic. You all know I love a lot of garlic and garlic adds tons of flavor. And it has so much nutritional benefits. So we're going to pong it first. Then rock chop it and set it aside. Now I had some patchouli in the fridge that I didn't want to spoil. So I placed in some patchouli in there. And that was such a wonderful addition. Once that was finished is what my rice look like. It's not completely cooked but it's perfect for what we wanted to do and it has a bit of water in it still. We are not going to take all that water instead. We're going to place up another pot and I'm going to place in some ground beef. Once that is in there, we are going to go in and we're going to stir it until it becomes brown like this. Normally, beef sends out a lot of oil that I was depending on but this was a bit lean. It didn't have as much oil but that's okay. We're going to work with it. So, in goes my aromatics. So, we're going to put in all those lovely seasonings that we chunked earlier along with the carrot and we're going to mix everything in. Of course we have to put in a generous amount of salt in there. What salt does is it breaks down the aromatics faster and it helps the aromatics to release its flavor. Then I'm going in with some liver. And this is what really makes the rice the dirty rice. It gives it the real color of the rice. So if you don't like liver feel free to omit it. Now once we mix in that liver a bit. And what I did is that I cut the liver up in some smaller pieces. Once it's in there I added a hefty bit of smoked paprika and now I'm adding in some jerk seasoning. I always tell you all that this particular jerk seasoning which is from Chief is packed with flavor. It's not too hot. Uh but it's packed with flavor. And I also went in there again with some complete seasoning and we're going to mix everything up until it's cooked. Well cooked. And the last thing we will put in before the rice is the patchoy. I don't want the patchoy to overcook. So I'm just going to tin it until it gets bright in color. So it's no long cooking. Now we're going to place in that rice in there. What I like to do is to gradually add in my rice so I don't throw everything one time. I normally put about two to three spoons then mix it. Um to me that way it's easier to get everything incorporated but of course you do it like you like. And as you all remember the beef did not have much oil so I added some cooking butter. I added some golden ray. And this is the end result. Now these boys who only like rice when requested it this food. Ask someone then ask me to prepare for them for lunch the following day.
