This black bean and corn salad is a make-ahead dish that everyone loves. Bonus: it doubles as a dip!
Ingredients

• 1 Avocado
• 1 (14.5 oz) can Black beans
• 1/2 cup Cilantro, loosely packed fresh
• 2 ears Corn, fresh
• 1 Garlic clove, large
• 1/4 tsp Oregano, dried
• 1 Red bell pepper, diced (about 1 cup)
• 1 cup Red onion
Condiments
• 2 Chipotle peppers in adobo sauce, canned
• 2 tbsp Honey
• 2 tbsp Lime juice, fresh
Baking & Spices
• 1/4 tsp Black pepper
• 3/4 tsp Salt
Oils & Vinegars
• 2 tbsp Red wine vinegar
• 3/8 cup Vegetable oil
