Coated in a delicious honey-garlic butter plus some greens, crunch & goat cheese 👊 recipe by @starinfinitefood insta page video comment box 🎁 • 3-4 medium zucchini Salt Olive oil • For the butter: 3 tbsp unsalted butter, softened 1 tbsp olive oil 1 tbsp honey 1/2 tsp salt 2 tbsp parsley 3 cloves minced garlic Pepper to taste • For the toppings/ 1/4 cup chopped arugula 3 tbsp crumbled goat cheese 2 tbsp toasted pine nuts • 1️⃣Preheat the oven to 425. 2️⃣Slice the zucchini lengthwise and score the tops, then place on a plate and salt the tops generously. Let them sit for 10 minutes. 3️⃣While the zucchini sits, make the butter. Add the butter, olive oil, honey, salt, parsley, garlic and pepper to a small bowl. Mix together to form a paste. Set aside. 4️⃣Use a paper towel to remove the moisture from the tops of the zucchini. Do not rinse. 5️⃣Heat a cast iron pan or heavy skillet over medium-high heat. Add some olive oil and place the zucchini face down. Place a heavy pan on top to press the zucchini down. Sear for 2 minutes, until the tops are browned. Flip the zucchini over and place in the oven for 10 minutes. 6️⃣Remove the zucchini from the oven, then place a spoonful of the butter over each zucchini and spread over the tops. Place them back in the oven for 10-12 more minutes, until tender. Ingredients - 3 slices bacon - 1 2-pound head cauliflower, cored and coarsely chopped - 1 small onion, chopped - 1 ¼ cups shredded extra-sharp Cheddar cheese - ⅔ cup sour cream or whole-milk plain Greek yogurt, plus 1/4 cup, divided - ½ teaspoon ground pepper - ¼ teaspoon salt - 1 ½ tablespoons snipped chives Directions 1. Preheat oven to 425°F. Lightly coat eight 6-ounce ramekins with cooking spray and place on a large rimmed baking sheet. 2. Cook bacon in a large nonstick skillet over medium heat until crisp, 6 to 8 minutes. Transfer to a paper-towel-lined plate and chop when cool enough to handle. Transfer the bacon drippings to a large bowl. Add cauliflower, onion, Cheddar, ⅔ cup sour cream (or yogurt), pepper and salt. Stir to combine.
