Drain the pasta and reserve some of the cooking water in a separate cup. In a separate pan, heat oil over medium heat. Take your peeled and deveined shrimp, pat them dry, and cook until pink and fully cooked. Remove the shrimp from the pan and set aside, leaving the shrimp bits in the pan. In the same pan, add diced shallot, minced jalapeño, and minced garlic. Sauté until the vegetables soften and become translucent.
