Cevapi, or Ćevapi (if you want to be legit 😉), is a staple Balkan dish that’s not only a popular street food but also a must-have at every Balkan gathering or barbecue. In Bulgaria, we refer to these small meat sausages as Kebapcheta (same ingredients, but slightly longer to resemble a kebap), and I have been enjoying these ridiculously tasty little meat sausages since I was a mini Sneji. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Extra Notes 🗒️ 1. The egg is OPTIONAL so if you’re egg-free, leave it out. Depending on the quality or type of meat you use, I like to add an egg or egg white as a binder. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Depending on where you’re from, recipes will slightly vary (Bulgarian Kebapcheta are slightly different) made with a touch of cumin. In Bulgaria we add sparkling water or beer as it adds a light + airy texture! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Some variations won’t call for onion, but it’s my special trick to grate it and add it in as it adds so much extra flavour. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. You can use any ground meat of choice here based on your lifestyle and preference. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5. You can flash freeze the cevapi before cooking and store them in the freezer for MONTHS! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6. Must refrigerate for 24HRS before GRILLING!
