 JAPCHAE (KOREAN GLASS NOODLE STIR FRY): my recent noodle obsession, this dish is packed with lots of colorful veggies and tossed in a savory sauce. Japchae is great for meal prep and leftovers because it holds really well in the fridge. It is good served cold as it is warm! Here I kept it simple for meatless Monday, but you can easily add any meat for extra protein.⁣

2 green onion, chopped⁣
3 clove garlic, minced⁣
4 shiitake mushrooms, sliced⁣
