Paleo spaghetti squash casseroles: Roast your spaghetti squash. Then you can use the following variations to provide a great variety of healthy choices to your family.
Italian:
Favorite gluten free tomato sauce
Ground grass fed beef with onions, 2 cups raw spinach, and garlic then mix with sauce.
Beat two omega 3 eggs combined with meat sauce and spaghetti sauce
If you are dairy free don't add cheese otherwise top with Parmesan and mozzarella. Bake 375 for 30 mins.
Mexican : follow the above but substitute tomato sauce for 2 cans roasted tomatoes with green chillis. Add 1 tbsp of chilli powder and 2 tsp ground cumin. Mix and bake.
Of course you can substitute chicken in both of the above.
Finally 1 cream sauce for the dairy/paleo folks:
1 cup of walnuts
3 garlic clove
1/2 c of parsley
20 basil leaves
1.25 cups of unsweetened coconut milk or heavy cream
Salt and pepper to taste
Mix with spaghetti squash and chicken for a great meal.
