A rich, coconutty broth packed with fragrant lemongrass, shiitake mushrooms, and silky vermicelli noodles - check out the recipe below 👇 Ingredients: For the Paste: 2 tsp salt, 1 cup lemongrass, 1 tbsp fresh ginger, 1 banana shallot, 1 tbsp coriander seeds, 1 tsp white peppercorns, 1 tbsp brown sugar, 5 kaffir lime leaves, 1 bunch coriander, 3 tbsp lime juice For the Soup: 1L veg stock, 400ml coconut milk, 1 tbsp tamari, 300g shiitake mushrooms, 1 bunch spring onions, Handful fresh coriander Noodles: 400g vermicelli noodles, cooked to packet instructions How to Make It: 1️⃣ Make the Paste: Blend or pound all paste ingredients into a rough, fragrant paste. 2️⃣ Cook the Paste: Gently fry the paste for 1–2 mins in a large pot with a little oil. 3️⃣ Build the Broth: Add veg stock, coconut milk, tamari, and mushrooms – simmer for 10 mins. 4️⃣ Add the Spring Onions: Stir through right at the end for a pop of freshness. 5️⃣ Assemble: Divide noodles between bowls, ladle over the hot broth, and top with fresh coriander | Bosh | Facebook
