So, we're going to make something with it and I don't have the energy to do anything. It's the first day of school and we've had meltdowns. Lots of em. Lots and lots of meltdowns today. So, we are going to try and make some creamy chicken wild rice soup. I don't know. Alexa, turn off. There was a timer set for the sensory swing. Everything is chaos. Let's hope that dinner comes together within the next 45 minutes or less. I have garlic. I need to mince it. I could use pre minced garlic. I should use pre minced garlic because I don't feel like doing anything today especially not cooking but here we are. The countertop is whack. Impressively. Looks good. I have pre-shredded carrots. I'm going to cut up some celery. However much I feel like. For the purposes of this soup. Two are necessary. Maybe three. Possibly. I don't know. Dice up your veggies however you like. My carrots are already match sticked. My garlic is chopped. My celery is going to get diced. I could use my crocodile chopper for this but I already need a knife and a cutting board to break down my chicken. No, I'm not doing it in a plastic bag. That sounds like an accident waiting to happen. No one here needs to ingest chicken bones. Celery chopped Dutch oven into my Dutch oven I'm going to put some butter that much I don't know and some avocado oil why avocado oil you're probably asking because avocado oil has a much higher smoke point butter has a lower smoke point this will keep the things in my pot from burning if I just cooked it in butter things might burn easier are you caught up my butter is mostly melted but I am mostly impatient so I'm going to throw my celery in to my pot. Carrots, however much you like. That looks good and garlic. If you're using garlic, use a metric ton. Cook this down until your celery no longer has crunch to it. I don't like crunchy celery. If you like crunchy celery, then let it be crunchy. I don't care. Sometime has elapsed and we are going to use this **** It's a lot of different rices. We are going to add in two cups of rice. Straight on top of your butter and your veggie. It's fine. I promise. Everything's going to be okay. Stop panicking. Gonna add some poultry seasoning. That looks good. Don't season over a hot pot better than me. If you season over a hot pot, it causes your seasonings to cloak. We don't like clunky seasonings. Onion powder or fresh onion. I don't know. I don't have any fresh onion and I couldn't find any diced dehydrated minced onion and finally, season complete because I like it. It's a blend. I don't exactly know what's in it but all I know is it's good and it makes everything delicious. I'm also going to add in a couple tablespoons of bouillon. If you were Making an entire chicken, you could just boil it in the chicken broth. I didn't make an entire chicken. I bought mine from Costco today. Throw in six cups of water or so. Three ish. Six ish. Now, I know what you're thinking. That's two-cup measuring cup. You would be correct but if you fill it all the way to the top, it's three cups ish and this isn't a science. This is dinner and now I'm realizing I need at least three ish more cups of water. Otherwise, our soup is going to be way too salty and how do I know the soup is going to be too salty the way it looks. I don't make the rules. Pop the lid on this **** and it go for 20 minutes ish. Everything is eyeball. Nothing is a recipe. This isn't even real life and I know what you're thinking. Jessica, didn't you say you had a chicken? Yeah, I do. I have a Costco chicken. A whole one that I'm going to dismember here right now in my kitchen while that cooks over there. Do it however you like, whatever way you prefer to dismember your chicken. I prefer to go with my hands and then chop it up in pieces as eat it. I'm feral. What can I say? I also don't like the chicken skin. Sue me. I don't care. You can eat your chicken I'm not eating mine. I'm just going to pull the chicken off the bones and make sure it is in soup-sized pieces. What's a soup-sized piece you might be asking like that? I don't know. You, have you ever eaten soup before? And I realized I could purchase rotisserie chickens pre disassembled, predismembered but what fun is that if I don't get to be an absolute savage? Whatever. It's done. Now, all this chicken is not going to make it into my chicken soup. That would be an insane amount of chicken but what I will do now is wash my **** hands. This is the point where you should clean up your mess. Stop leaving your kitchen. Disgusting. Sometime has elapsed. And this is what it's looking like. Take some chicken. Mine's rotisserie. You watched me dismember it. That looks good to me. I have to save some to the side for my feral children who keep running up to this bowl and eating handfuls of rotisserie chicken. Give this a stir and if you did not your soup to be creamy, you could stop here. Chicken and wild rice soup. Bam. I would like mine to be thicker. So, I'm going to use some cream of onion soup. I'm going to chuck it right in. Stir that **** around. A can of milk. You can add more. You can add less. You can add none. I don't know. I'm also going to add some of this. This is Parmesan flakes that I got at Costco. Why? I don't know. It looked good and I decided it needs to go in the soup. Does it is it supposed to go in the soup? Probably not. It is today. If you have a Parmesan rind left over from other Parmesan excursions, use that. Just chuck it in. Stir this around. Let it all come together and then we will serve it up for me and my husband for the next 7 days because this is a lot of **** soup. Now, it's at this point that you could taste your food and see if it needs anything. However, I'm morally opposed to tasting my food as I cook. Why? I don't know. It feels wrong and I trust myself. Does that mean I have flops sometimes? Yeah. Do I tell you when that happens? Also, yeah. I'm honest. I can't lie. Literally, it's a problem. It's a **** problem. There you have it, rotisserie chicken wild rice soup and Costco baguettes and I know what you're thinking. Is it even good? And I sure hope so because this is the first meal I've made since being home from Mexico and I could use some real my food. Not that the food in Mexico isn't real food. I just feel like I've eaten at a restaurant for five days and I just want my own food. Well, right now. Let's try this. Oh my god. That is so good.
