EASY BLACKBERRY COBBLER
Now that berries are in season, I am so thrilled to be able to cook with them. I love berry desserts and blackberries are one of my favorites. CAKE BATTER: 8 tbsp softened butter 1 cup cane sugar 2 tbsp sour cream or yogurt zest of half a lemon 2 eggs 1 1/4 cup + 2 tbsp all purpose flour 1 3/4 tsp baking powder 1/2 tsp salt 1/2 cup milk 1/2 tsp vanilla extract 1/4 tsp almond extract 3/4 cup blueberries 2 tbsp flour (for tossing) CRUMBLE: 1/2 cup brown sugar 1/4 cup white sugar 3/4 tsp cinnamon pinch salt 6 tbsp butter, melted 1 cup all purpose flour GLAZE: 3/4 cup powdered sugar splash almond extract splash vanilla pinch salt 1 1/2 tbsp milk . Preheat your oven to 350°F. Cream together the butter and sugar. Add sour cream, lemon zest, and then eggs one at a time, mixing until smooth. In a separate bowl, whisk your flour, baking powder, and salt. Whisk your milk and extracts in a separate jug. Add 1/3 of the dry mixture to the butter mixture and mix to combine. Add 1/2 the milk mixture and mix to combine. Repeat until both the dry and milk mixtures are all incorporated (making sure to finish on the dry mixture). Toss your blueberries in the 2 tbsp of flour. Fold the tossed blueberries into the batter. Set aside. To make the crumble, mix together the sugars, salt, cinnamon, 1/2 the flour, and the melted butter. Add the rest of the flour and mix until you reach a crumbly consistency. Grease an 8” springform pan with nonstick cooking spray and line with parchment paper. Transfer the cake batter into the pan. Top with with the crumble topping. Bake the cake in the preheated oven for 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs. Mix together all the glaze ingredients in a small bowl. Add more milk or powdered sugar as needed to reach a smooth consistency. Drizzle glaze on top of the cake. It's so fast and then, what we're going to do here on top, we're going to put I have this blueberry muffin mix. We're just going to sprinkle this on top, alright? So, it's going to be like going to be like kind of like a crumble topping, alright? It's going to be so good. Alright. Just going to sprinkle, sprinkle this all the way around. And then yeah we're going to use the whole thing I wasn't sure but we are alright so easy oatmeal blueberry muffin mix blueberries that's really it y'all and then you know what else we're going to do we're going to put some more cream right on top we're just going to drizzle it right on top like so oh my goodness y'all this is going to be so good I'm so excited I love blueberries I love cooking and I love breakfast this is one of my favorite recipes I've ever made in my entire life y'all and yes, you know what?
