INGREDIENTS: • - 1 red onion • - 2 garlic cloves • - Vegetable oil (for frying) • - 4 tomatoes • - 1 tbsp paprika & garam masala, 2 tsp turmeric & cumin, 1/2 tsp coconut sugar, 1 tsp salt • - 2 heaping tbsp tomato paste • - 2 cans chickpeas • - 1 cup full fat coconut cream • - Juice from 1/2 a lime INSTRUCTIONS: • Strat by chopping your onion, garlic and tomatoes. • Heat oil in a pan over medium high heat, add the onion and garlic and fry for 2 minutes. • Add the spices and fry until fragrant. • Add chopped tomatoes, tomato paste and some boiling water into the pan and fry until tender. Remove from the heat and transfer into a blender. Blend until smooth and pour back into the pan over medium high heat. • Drain the liquid for the chickpeas before adding them into the pan.
