Here is how I make it: • Flour 100% 500g (4 cups and 3 tbsp) • Water 60% 300g* • Instant dry yeast 1% 5g (1.5 tsp) • Sugar 1.6% 8g (2 tsp) • Salt 1.8% 9g (1.5 tsp) • Olive oil 2% 10g (3/4 tbsp) Dissolve yeast and sugar in water. Then add flour and salt, mix and combine in the bowl, then move to the kitchen surface and knead for 8 minutes. (You can also use a stand mixer.)
