Let’s make 6 Bacon Egg & Cheese Burritos (using some meal prep tricks) and get ourselves 35g of protein per serving. ​​ ​​8 ounces bacon ​​18 eggs ​​16 ounces cottage cheese ​​1 tsp sea salt ​​1/2 tsp ground black pepper ​​1 cup shredded cheddar cheese (double the cheese to get an extra 4g of protein per serving!) ​​6 burrito-sized tortillas ​​ ​​Spread the bacon out on a rimmed baking sheet. Bake at 350F for 20 minutes, or until the bacon is crispy. Drain grease off the baking sheet, leaving bacon behind. ​​While the bacon bakes, prepare the egg mixture by blending the eggs and cottage cheese together. Pour the mixture over the baking sheet with the bacon (less the grease). Sprinkle the top with salt and pepper
