We shared these crusted sweet potatoes last year and so many of you made them over the holiday season. Minimal effort required, but maximum flavour. Add them to your festive spread ASAP! Ingredients: - 2 tbsp extra virgin olive oil - 2 tsp paprika - 1 tsp garlic granules - 1 tsp dried oregano - 1 tsp sea salt - 60g (2.1oz) parmesan, finely grated (1 cup, grated) - 2 (600g, 21oz) sweet potatoes, quartered To serve: - ¼ cup pesto or lemon tahini dip Method: Preheat the oven to 180°C or 350°F. Whisk together the extra virgin olive oil, paprika, garlic, dried oregano and sea salt. Pour the spiced oil over the base of a baking dish. Sprinkle the grated parmesan evenly over the top. Press the sweet potato pieces cut-side down into the baking tray. Drizzle two extra tablespoons of olive oil over the top. Bake in the preheated oven for 40 minutes.
