My Chinese mom taught me to boil tofu in salted water for the best results. To be honest, I was skeptical first but when I thought about the science behind, it all made sense. Let me explain what is happening: 1. Osmosis of water Water goes out Boiling draws out excess moisture, especially from the surface. Scott's Pizza Tours on Instagram: "Want to get that pizzeria char from your home oven? IT IS POSSIBLE! 🍕 Just use your BROILER! It works great if the broiler is located on the ceiling of your oven. First the pizza goes into your oven, preferably on a pizza stone (or @bakingsteel in my case) set about 6-8 inches from the broiler. As soon as the pizza lands, switch the oven from bake to broil. Once the oven gets too hot and the broiler turns off, turn the pizza 180 degrees, and then it’s back to the bake setting. At the very very end, just before you’re ready to pull the pie, switch back to the broil setting and turn the pie until the top is evenly baked. This should take about a minute. Just make sure the kiddos stay back because you’ll be doing this with the oven door open. Go get
