Ingredients 1 lb white fish fillets (cod, haddock, or tilapia) 1 cup all-purpose flour ½ cup cornstarch 1 teaspoon baking powder 1 teaspoon salt ½ teaspoon paprika (optional) 1 cup cold sparkling water (or club soda) Vegetable oil for frying Lemon wedges and tartar sauce, for serving Instructions Prep Fish: Pat fish fillets dry and season lightly with salt. Make Batter: In a bowl, whisk flour, cornstarch, baking powder, salt, and paprika. Gradually whisk in cold sparkling water until smooth. Heat Oil: Heat 2-3 inches of oil in a deep skillet or pot to 350°F (175°C). Coat Fish: Dip fish into the batter, letting excess drip off. Fry Fish: Fry fish in hot oil for 3-4 minutes per side, or until golden and crispy. Drain on paper towels. Serve: Serve hot with lemon wedges and tartar sauce.

Garlic Butter Sauce: Melt butter in a saucepan, add garlic, lemon juice, smoked paprika, salt, and black pepper. Brush lobster meat generously with the sauce. Broil Lobster: Broil for 10-12 minutes until meat is opaque and lightly browned on top.
