Matt Santos on Instagram: "How to Spatchcock a Whole Chicken 🍗🔪   Spatchcocking a chicken involves removing the spine in order to flatten the chicken. This allows it to cook faster and more evenly. In addition, there’s more surface area and exposed skin for seasoning and browning. The skin becomes more crispy as well. Placing the chicken on a wired rack when roasting prevents it from sitting in its own juices and getting soggy. Tucking the wing tips at the end prevents them from burning.
