This is probably one of my favourite desserts. It takes me back to eating Thai Mango Sticky Rice by the road side in Bangkok and sharing it with my sister who loves this too. It’s a delicious blend of glutinous rice cooked in some coconut milk along with some fresh sweet ripe mangoes. It’s actually really simple to make at home!

Mango Ube Sticky Rice
Ingredients:
1 1/2 cup glutinous/sweet rice
13.5 oz can of coconut milk
1/2 cup sugar
pinches of salt
1 1/2 tsp ube extract
1 tbsp tapioca starch
1-2 ripe mangos
toasted sesame seeds

1. clean/rinse your rice. cook your sweet rice in a rice cooker. (for water content reference, fill til 1/4 of your finger tip of extra water over the rice)
