Tieghan Gerard on Instagram: "Red Wine Braised Pot Roast. November dinners are my favorite. Especially a slow cooked pot roast. There is nothing more delicious. This is my go-to recipe - beef pot roast braised in red wine with onions, carrots, and fresh thyme. Do not skip the creamy mashed potatoes. I cook the potatoes WITH the pot roast, then mash. They’re super easy and sooo good. I’d add some bread on the side too (: YUM 1 (3-4 pound) beef chuck roast salt and black pepper 2 tablespoons flour 1 yellow onion, thinly sliced 6 cloves garlic, chopped 2 cups carrots, largely chopped 2 tablespoons tomato paste 2 cups red wine ½ cup brandy or cognac 2 cups broth 2 bay leaves 2 tablespoons chopped fresh thyme ½ cup fresh parsley Mashed Potatoes 1 pound small to medium potatoes 2 tablespoons
