Tomato, Avocado & Artichoke Salad with Hazelnuts and White Balsamic Vin 👌🏻❤️ trust me when I say you NEED this in your life.
P.S: you know the drill, when you place tomatoes atop a strainer with some salt for 15 ish min and let them rest, the juices that come out are the perfect base for a vinaigrette.
Ingredients:
• 1 pint heirloom cherry tomatoes (quartered).
• 1 large avocado (cubed).
• 1/2 cup marinated artichoke hearts.
• 1/4 cup hazelnuts (chopped).
• 5-6 mint leaves (chiffonade).
• 3 tbsp chives (chopped).
• 1 tbsp white balsamic vinegar or red wine vinegar.
• 1 tbsp grain mustard.
• 2 tbsp olive oil.
•Salt and pepper to taste.
