Im finally sharing my no.1 go-to salad that i absolutely love making all the time, its not your average salad btw, alot of ingredients that work remarkably well together!
• Lets talk ingredients
• For the salad:
• -5 oz/150gm Arugula( you can use mixed green leaves too)
• -1 cup uncooked pearl Couscous
• -1/2 cup roasted red bell pepper( bought or homemade), chopped
• -1/2 cup shallot,diced
• -1/3 cup pine nuts, toasted
• -1/3 cup dried Cranberries , unsweetened
• -2 balls Burrata or 1 cup mozzarella balls
• -Salt & pepper to taste
-1 tbsp Olive oil
For the dressing:
• -1/4 cup lemon juice
• -2-3 TBSP EVOO
• -1 tbsp honey
• -1 tsp Dijon mustard
• -1 garlic clove
• -Salt & fresh pepper to taste
• -fresh Oregano leaves
