Red Velvet Cake Minis - Sprinkle Bakes

This cake recipe is my go-to Red Velvet sponge roll, but instead of rolling it up, I've used a pastry ring to cut the sponge sheet into 3" stackable rounds. The rounds are filled with a light whipped cream and cream cheese mixture, then topped off with a little more of the same.

• 4 Eggs
Baking & Spices
• 1 oz 2 tablespoons red food coloring, red
• 1 tsp Baking powder
• 3/4 cup Cake flour
• 1/4 cup Cocoa powder
• 1/3 cup Granulated sugar
• 1/2 tsp Salt
• 6 Squares of quality chocolate such as godiva
• 3/4 cup Superfine sugar
• 1 tsp Vanilla extract
Oils & Vinegars
• 1 tbsp Vegetable oil
• 1 tsp Vinegar
Dairy
• 2 tbsp Buttermilk
• 4 oz Cream cheese
• 2 cups Heavy whipping cream

• 6 Gold chocolate buttons or other metallic dragees
