RECIPE ⬇️ Ingredients: 3 zucchinis 1 tbsp olive oil 1 tsp salt 1 tsp pepper 1 lb ground Turkey or beef 1 packet taco seasoning 1/2 cup water 1 can rotel 1 cup corn 2 cups shredded colby jack cheese Instructions: Preheat oven to 400F. Cut the zucchinis down the middle and remove any seeds and some of the insides. Lay them in a 9X13 casserole dish and top with the olive oil, salt, and pepper. Cook for 12 minutes. While the zucchini is in the oven start on your filling. To a pan brown the meat and drain any excess grease. Stir in the taco seasoning and water until the meat is evenly coated. Add in the rotel and corn and stir until everything is combined. Add an even amount of filling into each zucchini.
