Recipe 🔽 Finding meals my whole family will eat feels like a full time job sometimes, but they all gobbled this up 🙌 Preheat oven to 380° Slice two bell peppers of your choice, thin Slice however much onion you like, or not (I only put it on half because not all my kids eat onion) Add 2c minute rice to a 9x14 Pyrex (or similar) Add 2c chicken broth and stir (I used low sodium) Add 1/2 packet of fajita seasoning to that and mix (I made my own seasoning, dm me if you want that recipe) Top that mixture with your peppers and onions Slice 2-3 chicken breasts thin, season with a portion of your remaining fajita seasoning Add chicken to top of your peppers and onions and pour the last of your seasoning over the top of it all (forgot to film that part) Cover and bake for 40 minutes Remove from oven and top with mexi blend cheese Put back in oven uncovered for about 5 more minutes to melt the cheese Serve as a fajita bowl with sour cream, avocado, salsa, lime, tortilla chips… or add to taco shells! Tip: Use kitchen scissors to chop this up super small for your picky eaters, top with sour cream and mix for a creamy dish with hidden chicken and veggies So yummy!!! Ingredients: Shrimp - 1lb Olive Oil Chili Lime Seasoning Lime Juice - 1 Honey Pineapple Slaw: Coleslaw mix - 1 bag Sour Cream - 1/2c Mayo - 1/2c Pineapple Juice - 4tbsp Pineapple Chunks - 3tbsp Lime Juice - 1 Salt Pepper Sugar Garlic Powder Onion Powder Avocado Bean Salsa Avocado - 1 Black Beans - 1 can Lime Juice - 1/2 Chili Lime Seasoning Worcestershire Sauce Directions: 1. Defrost shrimp and add to a bowl. Season with olive oil, chili lime seasoning, lime juice and honey. Mix to combine and set aside to marinate 2. Wash the coleslaw bag and then add to a large bowl. Add in sour cream and mayo, pineapple juice and chunks, lime juice, salt, pepper, sugar, garlic powder and onion powder. Mix to combine. 3. Dice avocado and add to a bowl along with a can of rinsed beans. Season with lime juice, chili lime seasoning and Worcestershire. Mix to combine. 4. Add marinated shrimp to a pan on med-high heat. Cool for 2-3 minute per side and toss. Add a touch more honey before removing from the pan 5. Serve with some toasted tortillas and rice. Top shrimp with pineapple slaw and your favorite sauce.
