The tuna soaks up all the flavors from the spicy mayo and pairs perfectly with the luscious cream cheese. I probably ate about 6 of these in one sitting because it is that good! Enjoy. - 1 can unsalted tuna (5 oz.) - 2 Tbsp kewpie mayo - 1 Tbsp sriracha sauce - 1 Tbsp light soy sauce - 1 tsp sesame oil - pinch of salt - fresh ground pepper to taste - 4 oz. cream cheese, cut into 1 inch cubes - 1 cucumber, sliced in 1/4 inch thick rounds - 12-16 small rounds of rice paper (I used smaller rounds of rice paper but if you only larger sheets, just add more filling) - 1 jalapeño, sliced thinly, as garnish 1. Add tuna, mayo, sriracha sauce, soy sauce, sesame oil, salt and pepper to a bowl and mix well. 2. Dip rice paper in warm water then add 2 sliced cucumber, about 1-2 Tbsp of tuna, and 1 cube of cream cheese. Fold both sides, then roll up to make a small package. Wrap the roll again in another piece of rice paper to make it double wrapped. In a pan, over medium heat, add olive oil and wrapped bites. Fry on each side for about 3-4 mins until crispy and brown. 3. Serve with sliced jalapeño on top and your desired dipping sauce.
