To make them I just do two cups of Hungry Jack pancake mix with a cup and a half of water and one pound of cooked and drayed sausage. Then I just add in about a cup of shredded cheddar and 1/ 4 cup of maple syrup and then that gets stirred together and spooned into a mini muffin pan. This recipe is enough butter to make 48 mini muffins and they bake at 400 degrees for about 15 minutes. We like to make these for breakfast on a Sunday and keep the leftovers in the fridge for an easy breakfast during the week but they also freeze really well for an easy breakfast down the road. The
