40min · 5 servings Ingredients: • 2 cups flour • 1 tsp instant yeast • 1 tsp salt • 1 cup warm water 250ml (add gradually) • 1 tsp olive oil • 2 plantain, boiled and mashed • Knead for 5 minutes and let rest for 1 hour • 1 tbsp olive oil • 1 onion, diced • 2 chili peppers, diced • handful coriander, chopped • salt to taste • 2 tbsp butter for frying 1. To start, add the flour, instant yeast and salt to a bowl and mix before gradually adding the warm water. 2. Mix together until you have a formed a dough ball. Knead for a FULL 5 minutes cover with police oil and set aside for 1 hour. 3. During the wait time dice the onion, chillis and coriander and set aside. 4. Peel and chop the plantain into 2 inch pieces then boil on a medium to high heat until al dente
