Chocolate Dipped Peanut Butter Ice Cream Bars🤤 They’re gluten free, dairy free, and refined sugar free, and soo good. Peanut Butter Ice Cream: • 1 (13.5oz) can full fat canned coconut milk • 1/2 cup peanut butter • 1/2 cup pure maple syrup (or honey) • 1 tsp pure vanilla extract • 1/4 tsp salt (use 1/8 tsp if using a salted peanut butter) Chocolate Shell: • 9oz dark chocolate chips/chunks (I used dairy free & refined sugar free) • 2 tbsp coconut oil Topping: • 1/2 cup peanuts • 3oz dark chocolate chips/chunks (I used dairy free & refined sugar free) Instructions: • 1. High-Protein Chocolate Quinoa Pecan Bites - Perfect Pre-Workout Snack
Base ingredients: 1.5 cups (150g) pecans 12 large, soft medjool dates 1/2 cup (120g) almond butter 3 tbsp raw cacao powder Topping 140g melted dark chocolate 1 cup (25g) puffed quinoa* *Optional but recommended - for a crispier texture toast your puffed quinoa in the oven for 5 mins before using 1️⃣ Add all the base ingredients to a food processor and blend until fully combined. Add 1-2 tbsp of water as you blend if your dates are a bit dry. It should be really soft and sticky. 2️⃣ Separate into 12 pieces, press down into a cupcake tray or cases then put in the fridge whilst you melt the chocolate 3️⃣ Melt the chocolate and add the quinoa and mix well. Top each one with a spoonful of the chocolate mixture then refrigerate again

Bake at 350 for 25-30 minutes until tops are golden brown. The trick is to allow them to cool completely before cutting into bars. You can cut them into bars, break them into clusters or crumble into granola.. it’s so good either way! Store in the fridge for 2 weeks or freezer for 3 months.
