😍Ingredients 
For the chicken
▢2 pounds boneless skinless chicken breast, pounded to an even ½-inch thickness
▢2 tablespoons olive oil, plus more for cooking
▢2 tablespoons lime juice (about 1 lime)
▢2 tablespoons orange juice (about ½ navel orange)
▢½ cup chopped cilantro
▢1 tablespoon soy sauce
▢3 cloves garlic, minced
▢1 tablespoon chili powder
▢1 teaspoon ground cumin
▢1 teaspoon dried oregano
▢1 teaspoon kosher salt
▢½ teaspoon paprika
▢½ teaspoon ancho chili powder

INGREDIENTS
1 lb of ground beef 
1/2 tsp each salt and pepper
1/4 tsp cayenne
2 tsp chili powder
1 tsp each of cumin and dried cilantro
1 onion, chopped 
1 tbsp minced garlic 
10 oz can of Rotel (not drained) 
8 oz can of tomato sauce 
1 1/2 cups of beef broth
1 cup of long grain white rice (uncooked & rinsed) 
2 cups of shredded cheddar cheese 
Sour cream 
Cilantro 

INSTRUCTIONS. 
Brown 1 lb of ground beef in a skillet over medium-high heat, add all seasonings, and the onion. 

Let that cook until beef is cooked through and onions have softened. Drain any grease from the skillet. 

Add Rotel, tomato sauce, minced garlic, beef broth, and uncooked rice to the skillet. Stir well, cover with a lid, and cook

All you need is 👇🏻
1 lb taco seasoned ground beef
6 mission carb balance flour tortillas
1 can refried beans
Mexican style shredded cheese
1 can red Enchilada sauce
Shredded iceberg lettuce
Pico de gallo
Sour cream / Greek yogurt
Hot sauce (optional)

Preheat oven to 350°
Spread (heated up) refried beans, taco seasoned ground beef and shredded Mexican cheese on bottom of tortilla
Roll and repeat till your dish is filled
Pat them down and cover in red enchilada sauce
Cover with more shredded cheese and bake for 25-30 minutes
Top with iceberg, pico, and sour cream
