1 meal / 1 package of udon noodles. 1. Satay yellow onion, zucchini, and quartered cremini mushrooms in a little sesame oil. Once softened, set aside. 2. Mix 3 tbsp of hoisin sauce, ½ tbsp Sriracha (more for extra spice), 1 tbsp lime juice, 1 tbsp soya sauce (I use Maggi), 1 tbsp rice vinegar and ½ tbsp peanut butter. 3. Satay sauce and add udon package noodles. Toss to coat noodles in sauce. 4. Add onion, zucchini, and mushrooms. Add green onion, cilantro and peanuts. Toss and serve.
