• 1 Eggplant

• 2 cloves Garlic

• 2 cups Parsley, packed leaves

• 2 Zucchini

• 1 Kosher salt

• 2 Red peppers

Oils & Vinegars

• 3/4 cup Olive oil, extra-virgin

• 1 Olive oil

• 2 tbsp Red wine vinegar

Bread & Baked Goods

• 4 Large ( 1/2”) slices crusty bread, crusty
