Yummy - Moist Carrot Muffins 🧁 Ingredients: - ¼ cup softened butter - ¼ cup powdered sugar - 1 egg - 1 tsp vanilla - ⅔ cup all-purpose flour - ½ tsp baking powder - ½ tsp cinnamon powder - ½ cup grated carrot - 2 tbsp walnuts (plus extra for topping) Instructions: 1. Beat butter & sugar until fluffy. ✨ 2. Add egg & vanilla. Mix well. 3. Sift in flour, baking powder & cinnamon. Mix. 4. Fold in grated carrots & walnuts. 5. Scoop into cupcake liners. 6.
