It makes entertaining easier, weeknight dinners healthy, and you really don’t have to think about what to make because it’s done! The thing that I probably love the most about both French cooking and baking is that they are usually quite simplistic and use minimal ingredients, letting the quality rather than quantity of the ingredients do the most work. To me, if you break down most of the classic French dishes, it’s almost like an easy formula. You brown meat, deglaze with wine, add some liquid, then simmer for a long time, the longer the better and voila. Oh and also lots of butter! Cooking doesn’t take the precision that baking does which honestly overwhelms me in my type A brain, but I’m slowly getting more and more comfortable to cooking this way☺️ The fondant baulois takes time to set, so I make that first so that it can be ready after cooking is done, b

When cooked right they are super moist, tender and fall off the bone. The key is cooking it to the right temp. Now food safety says you should cook chicken to 165F - but this isn’t optimal for thighs and drumsticks. They have 3x more collagen and fat then a breast does, and collagen and fat breaks down at temps around 180F, meaning it can be tough if only cooked to 165. I instead cook my thighs and drumsticks to around 180 to allow for the best texture thy is moist and tender. If you
