They are tender, salty, sweet & crunchy all at the same time 🙃 • 1 small eggplant, cut into thin slices Salt Olive oil 5 oz Boursin 1/4 cup plain Greek yogurt • For the topping: 1/3 cup chopped walnuts 1/4 cup chopped fresh basil 4 dates, minced 1/4 tsp lemon zest Pinch salt • 1️⃣Salt one side of the eggplant slices and let them sit for about 10 minutes. 2️⃣While the eggplant sits, make the filling. Add the Boursin and yogurt to a bowl and mix to combine until creamy.
