20min · 2 servings Ingredients For Cod Fish: • 2 tsp Coconut Milk • 2 tsp Sweet Chili Sauce • 1/4 cup Gluten Free Panko - Pulsed • 3 tbsp Shredded Coconut • 1/2 tsp Kosher Salt • 2 each Cod - Loin, 6-7oz For Coconut Chili Sauce: • 1/4 cup Coconut Milk • 5 tbsp Sweet Chili Sauce • 1 tbsp Scallions Directions 1. To make coconut chili sauce, combine coconut milk with sweet chili sauce. Top with sliced scallions (or save scallions for topping it at the very end) and set aside. 2. Combine coconut milk with sweet chili sauce, season with a little salt if needed. Set mixture aside. 3. Combine panko, shredded coconut and salt in small bowl. Set aside. 4. Dry off cod loins with paper towel. Brush "skin side" of cod loin with coconut milk mixture and then press into pank

Ingredients: 4 cod fillets 2 tbsp olive oil 2 cloves garlic (minced) 1 cup heavy cream 1/4 cup chicken broth 1/2 cup sun-dried tomatoes (chopped) 1 cup spinach (fresh) 1/4 cup Parmesan cheese (grated) Salt and pepper to taste Instructions: Cook cod: Season cod fillets with salt and pepper. Heat olive oil in a pan over medium heat. Cook the cod for 3-4 minutes per side until golden and cooked through. Remove and set aside. Make sauce: In the same pan, add garlic and cook for 1 minute. Stir in heavy cream, chicken broth, and sun-dried tomatoes. Bring to a simmer for 2-3 minutes. Add spinach & cheese: Stir in spinach and Parmesan cheese, letting the spinach wilt and the sauce thicken. Combine: Return the cod fillets to the pan and spoon the sauce over the fish. Cook for another 2-3 minutes.
