Beets
Beets, a root vegetable, are known for their sweet flavor. They are a good source of folic acid, vitamin C, antioxidants and iron. Use the green tops in soups, juicing or sautés for an excellent source of calcium, beta-carotene and iron. Beets are thought to improve circulation, strengthen the heart, improve liver function and when combined with carrots help hormone regulation. Try julienne cut carrots and beets tossed with a dash of olive oil and sea salt or simply roast them.
