Jim & Joelle on Instagram: "I rarely buy nuts, but this time of year, we always have walnuts on hand just to make this dish! Peel and dice one butternut squash. Roast with salt at 425 degrees for roughly 30 minutes until soft. As the squash is finishing in the oven, sauté one heaping cup of walnuts over medium heat, stirring often so they don’t burn. Once the walnuts begin to be a toasted brown and you can smell them cooking, remove from heat.
