INGREDIENTS: • - 1 cup aquafaba (liquid from chickpea can) • -1/4 tsp cream of tartar • - 3/4 cup sugar • - 1 tsp peppermint extract (or vanilla extract) • - Red gel food coloring INSTRUCTIONS: • Preheat oven to 100 c / 210 f. • Add 1 cup of aquafaba into a small pot and bring to a simmer. Let simmer for about 10 minutes until you're left with 1/2 cup of reduced aquafaba. Let cool completely. • Add the cooled aquafaba into a bowl / mixer and whip until the mixture is fluffier and lighter in color (about 1 minute). • Add a 1/4 tsp of cream of tartar and keep whipping for 2 more minutes. • Add about 2 tbsp of sugar at a time and whip until there's no sugar left. Whip until the mixture is very shiny and stable. • Using a small brush, draw stripes of red food coloring all around
