A vibrant red lentil soup (or stew) that is always hugely popular. A friend turned me onto this Ayurvedic dal recipe from the Esalen Cookbook years ago. Red lentil based, curry-spiced coconut broth with back notes of ginger and tomato, with slivered green onions, and a finish of cilantro or kale.

Produce

• 1 Carrot, medium

• 1 small handful Cilantro

• 2 tbsp Ginger, fresh

• 3 tbsp Golden raisins

• 8 Green onions or scallions

• 1 cup Red split lentils

• 1 cup Split peas, yellow

Canned Goods

• 1 14- ounce can Coconut milk

• 1/3 cup Tomato paste

Baking & Spices

• 2 tbsp Curry powder

• 1 tsp Sea salt, fine grain

Liquids

• 7 cups Water
