This is an excellent healthy recipe for vegan stew. Ginger, turmeric, heaps of veggies and high protein lentils make this antiinflamatory meals dinner delicious and soothing. This coconut milk stew is also handy to include in your vegetarian meal prep as the flavor only gets better as it sits. A great dish if you're starting with healthy eating or you just enjoy a delicious vegan soup from time to time.

• 1/2 cup Brown lentils
• 1/2 tsp Chili flakes, dried
• 1/2 tsp Coriander, ground
• 3 cloves Garlic
• 1 2-inch piece Ginger, fresh
• 1 small bunch Kale
• 1 1/2 lbs Sweet potatoes
• 1 Yellow onion, medium small
Canned Goods
• 1 13.5 oz (400 ml) can Coconut milk, full fat
• 4 cups Vegetable stock
Baking & Spices
• 1 Sea salt and ground black pepper
• 1/2 tsp Turmeric, ground
Oils & Vinegars
• 1 tbsp Coconut oil
Nuts & Seeds
• 1/2 tsp Cumin, ground
