This is my gluten free (and pasta-free) version of stuffed shells. This “cheesy” cashew filling tastes just as indulgent as the real thing.

• 1 tsp Oregano, dried
• 12 Savoy cabbage, medium leaves
Refrigerated
• 1/2 cup Tofu, firm
Condiments
• 2 tbsp Lemon juice
• 3 cups Marinara sauce
Baking & Spices
• 1/2 tsp Red pepper flakes
• 1 Salt
• 1 Salt & pepper
Oils & Vinegars
• 1 drizzle Olive oil
• 2 tbsp Ume vinegar
Nuts & Seeds
• 1 1/2 cups Cashews
Liquids
• 1/4 cup Water
Other
• handful of chopped chives and/or other fresh herbs
• (optional) - top with grated parmesan or pecorino cheese
