We're just going to use a can of white beans. This also saves a ton of time. The whole recipe comes together in under 15 minutes but it taste like it came from a restaurant. 1.7K views · 410 reactions | This Roasted Cauliflower White Bean Soup is one of my favorites to keep on heavy rotation during soup season! 😊 Not only does it taste incredible with the caramelized cauliflower and creamy white beans - it’s also so easy to make and loaded with nutrition. Recipe below ⬇️ or comment RECIPE and I’ll send it to you! 🔗 ❤️ INGREDIENTS • 1 head cauliflower (ab 4 cups) • ½ large yellow onion • 1 bulb garlic • 1 Tbsp fresh thyme, leaves removed from stems (or 1 teaspoon dried thyme) • 2 Tbsp extra virgin olive oil • ½ tsp kosher salt, more to taste • ¼ tsp black pepper • 1½ tsp paprika • 1 tsp cumin • 1 tsp coriander • 4-5 c low sodium vegetable broth or chicken broth • 1 (15 oz) can Great Northern beans, drained and rinsed • 2 Tbsp fresh lemon juice (ab ½ large lemon or 1 small. DIRECTIONS 1. Preheat oven to 400℉ (200°C). Line a baking sheet w/parchment paper and spray with cooking spray. Rough chop the cauliflower & onion. Remove the thyme leaves from the stems. Cut the top end off of a whole bulb of garlic. 2. Add the cauliflower, onion, and garlic to the sheet pan in a single layer and coat with olive oil, seasonings, and thyme leaves. Roast 30-35 min, until cauliflower turns golden brown. 3. Remove from the oven & add everything to a blender. *To add the garlic cloves, carefully squeeze them out of the skin being careful not to get the skins in the blender. 4. Drain and rinse the white beans & add to the blender along with broth & lemon juice. Blend until smooth. 5. To heat the soup, pour it into a large soup pot & heat on medium heat until it starts to bubble. Then lower to medium-low or low heat for another minute or two. If it’s too thick, add 1 more cup of broth. Add salt to taste. Hint: if you don’t have a high-speed blender, you can roast the veggies, then add everything to a large pot and use a hand-held immersion blender.
