Season with a good pinch of salt and add enough water to cover the rice about a centimeter above it. - once it boils drop the heat to a simmer cover and let it boil for 20 minutes. - fry the cubed potatoes in olive oil and once they crisp up add them to the pot and let them stew for another 20 minutes. - fry the minced garlic in a touch of olive oil and once it starts to brown add the coriander.
