35K views · 3.1K reactions | Oh boy! It’s a busy week! Exams at work, corrections, family, it’s all go. I made these at the weekend - used some and froze more - it’s a gorgeous little recipe that’s so simple to make and is a great one to have for lunchboxes, teatime, or visitors 😊 They are light and fluffy - and very moreish - let me know if you make them. Ingredients * 80 gms cold butter * 250 gms self raising flour * a dash of pepper * 1/2 tsp mixed herbs * 1/2 tsp smoked paprika * 30 gms parmesan * 5 sundried tomatoes - about 25 gms * 90 mls milk * 2 medium eggs Method Preheat oven to 200° C fan Add butter, flour, pepper, herbs and paprika to the food processor and blitz until combined to a biscuit crumb. Add the Parmesan and sundried tomatoes and blitz again to incorporate well. Set aside. Mix the milk and eggs together then add to the dry ingredients. See the video - bring this mix together with a fork - avoid hands in the dough as much as possible. Flour the counter well then add dough mix. Add flour above and use the fork or a knife to roll the dough in the flour. Knead lightly to bring together then roll out to about 2 cms thick. I used a 3.5 cm round cutter and got 24 mini scones from this mix. Add to a floured tray - place them close together so they rise rather than spread flat - that’s how you get a light fluffy high rise scone! Bake for 10-12 minutes. Enjoy with toppings of your choice - what would you have? #irishmammycooks #easyrecipes #savoury #savouryscones #madefromscratch #ilovebaking #lunchboxideas #teatime | Orla Drumgoole
