Black Bean Brownies: 1 can black beans, drained and rinsed 1/2 cup nut butter, peanut or almond are our favorite 1/2 cup pure maple syrup 1/4 cup cocoa powder 1/4 cup almond or oat flour 1 Tb oil 1 Tb vinegar 1 tsp baking powder 1/2 baking soda Pinch of salt 1 cup chocolate chips 1. Preheat oven to 350°F. Lightly grease an 8 x 8 glass pan, set aside. 2. In the base of a food processor, place the beans and pulse 5 or 6 times until well chopped. 3. Add the rest of the ingredients, minus the chocolate chips. Process until creamy and smooth. Occasionally scrape down the sides as needed. 4. Remove the lid and string 3/4 cup chocolate chips. Pour into the prepared baking dish and spread it out evenly. Top with remaining chocolate chips. Sprinkles optional. 5. Bake for 30 minutes or until toothpick and inserted comes out clean. The center will sink down a bit, but it’s normal and it means they are fudgy!
